UK Ambient Food Producer Trials Recipes in our Product Development Kitchen

Three products were trialled this week in the PDK for a large UK ambient food producer, including Tomato Ketchup, Jalapeno Jam and Caramelised Onion Marmalade.   

The ketchup contained no starch and was produced using just the In-Tank Jet Cook™ to heat and homogenise the product.  The flexibility of the high and low non-mechanical shear of the Jet Cook enables us to produce different finished product textures.  The ketchup had excellent viscosity, flavour, colour and the pulpy texture required by our customer.

A 1000Kg batch can be produced in less than 30 minutes.  

For the second Jalapeno Jam trial, we used Jet Cook and the Vapour Reduction System.  The Jet Cook heated the product to 100°C, then we added the sugar and thickener, before using the Vapour Reduction System to reduce the product to the required brix.  The finished product had good viscosity, a very clean and sharp flavour, great gloss and integrity of the chillies.

1000kg of this product could be produced in approximately 60 minutes.

Finally the Caramelised Onion Marmalade was produced using a combination of Jet Cook, Braising Bar and Vapour Reduction System.

The onions were initially cooked using the Braising Bar and then the Jet Cook to reach a temperature of 105°C.  We then added the sugar and started the Vapour Reduction System to reduce the liquid percentage of the product to 56 brix in approximately 30 minutes. The final product had excellent colour, flavour and viscosity.

We had a great day of product trials with our customer, producing high quality products whilst dramatically reducing their processing times.
