Production times reduced by up to 2½ hours with Jet Cook™, Vapour Reduction & Braising Bar!

This week we have been installing and commissioning another Jet Cook™ Steam Infusion System in New South Wales, with our Australian agents FPE, this time with a leading high quality privately owned producer with multiple sites servicing the food service industry.

The 1500Kg system consists of our patented Jet Cook™ Steam Infusion In-Tank unit, Braising Bar, Vapour Reduction and Recipe Manager.  A large variety of products are being produced on the new system including chocolate fudge, ketchup, tomato jams and sauces.

The initial Jet Cook™ product and process training has shown some amazing results including processing times reduced from 2 hours to 30 minutes when utilising our amazing Braising Bar and Vapour Reduction systems on jams.

In the fudge-style products, we incorporated more than 300kgs of powders into 160kgs of liquid with the use of our In-Tank Jet Cook™ unit.  This produced a smooth and glossy finished product with the production time being reduced from 3 hours to 30 minutes, and with zero burn-on.

The Head of R&D commented, “the system is incredibly quick and produces superb finished quality across a large product range, which is ideal for our business”.

We have already confirmed an additional three days of advanced training later this year to look at new NPD.
