Jet Cook Southern Indian Cooking Trials

After our meeting at Gulfood Manufacturing in Dubai two weeks ago, we had the pleasure of running trials with a large Southern Indian based food company who produce ambient sauces, meals, condiments and spices for the Indian food market.

The project engineering manager, executive chef and production manager visited our test facility in Bedfordshire to run four of their most difficult and time consuming products.

We produced the products to a superior quality than their existing products, using a combination of Jet Cook, Braising System and Vapour Reduction.

What impressed the customer the most was the dramatic reduction in processing time, one of which was reduced from 4.5 hours to 90 minutes.  We were also able to produce all their products on the same system. 

The High Temperature Braising System and Jet Cook allowed us to extract more flavours from the spices in their Roast Onion Gravy, and running this in conjunction with the Vapour Reduction System, we were able to reach the required brix for their hot filled ambient shelf stable products.   We also achieved a 3 hour reduction in the total processing time.

Other products included tomato-based sauce with particulates where the Jet Cook delivered its best results. The rapid heating, no moving parts, 50mm annular nozzle and our complete control of the process flow allows delicate ingredients to pass through undamaged.

The team presented the finished products to the manufacturing board of this multibillion $ company in India on Monday, and a follow up meeting has been arranged in two weeks at their head office in India. This will also involve a site survey of their new world class production facility presently being built.
