Traditional Indian Gravy and Dhal Processing made simpler with Jet Cook™

Yellow onion gravy and Gujarati dhal were on the menu in our test kitchen this week as we hosted Indian Company, Mamma Foods for trials on these two popular recipes.

It was critical to the customer that DCN’s Jet Cook™ Steam Infusion Technology gave them the same authentic taste, aroma and texture as a traditional cook method.   We demonstrated how the combination of the In-Tank Jet Cook™ Steam Infusion unit and Braising Bar could reduce their processing times and processing stages and still achieve the high quality and traditional flavour they were after.

Following the trials Mamma Foods have ordered their own Jet Cook system which will be used to produce traditional Indian gravies and dhal for both Indian and international markets, including export to the US and UK.  The system will also be used to produce traditional Italian sauces for hotels and restaurants in India.
