Jet Cook™ Trialled on Lamb Curry, Rice Pudding and Sausage & Baked Bean Hot Pot

This week we ran three very different product trials with a UK chilled and frozen food producer at our UK test kitchen.

The five objectives given by our customer were to demonstrate flexibility, speed of processing (compared to their traditional pressure cooking methods), product quality, clean-down time and ease-of-use.

The cooking of meat in their existing pressure cooker gives them a reasonably good processing time but is very detrimental to other ingredients in the recipes such as vegetables, potatoes and lentils, so the ability to produce at atmospheric pressure would improve all of their products.

The Lamb Curry was produced using both our World-Leading Jet Cook™ Steam Infusion System and our patented Braising Bar technology. The Braising Bar was used to first crackle the spice and then sear the lamb before adding the onions, which just need to be softened. This first stage of processing is invaluable in generating the flavour and texture of the product.

The other ingredients were added in different stages, and the Jet Cook™ was then used to heat and mix these very quickly to reduce the amount of valuable nutrition lost during long heat-up processes. This also helps to maintain the colour and integrity of the meat and vegetables.

The finished product had an excellent lamb flavour which had been highlighted by using the Braising Bar to sear the lamb, rather than the traditional pressure/boiling method.  The meat, lentils and potatoes had good particulate integrity and there was a huge difference in vegetable colour and definition.

The rice pudding was produced using a mixture of water and milk powders, and all heated and homogenised with the Jet Cook™ Steam Infusion System prior to the rice being added and cooked.

By using the Jet Cook™ we completely eradicated the burn-on which occurs during the cooking of this very sensitive product using a pressure cooker. The Baked Bean Hotpot also had great finished product integrity and flavour.

The customer was delighted with the versatility of the system and the excellent finished product flavour and quality.
