Jet Cook™ Produces Restaurant Quality Carne De Res Estofada & Arroz Con Leche

Carne De Res Estofada is one of Monte Azul’s biggest volume product with three meat varieties in the range; chicken, pork and shrimp. The recipe has a meat content of approximately 80% and typically takes 4 hours to produce traditionally with a very manual process.

First we seared the meat in the DCN steam jacketed kettle @ 155 °C with our patented Braising Bar and then added water, vegetables, herbs and spices and heated to 100°C using the In-Tank Jet Cook Unit, the product was then simmered and lightly agitated until cooked. The finished product was of excellent quality with no meat or vegetable break down which you may see from more traditional cooking systems.

The next trial was a repeat of Arroz Con Leche, but this time we used our Powder Accelerator to entrain the powders into the liquid phase to create an even smoother/creamier finished product.  We also reduced the cinnamon percentage from the first trial as the Jet Cook enhanced the flavour making it slightly overpowering. The final product was creamier than the first trial and the reduction in the cinnamon was perfect.  The processing time was 49 minutes compared to 4 hours.
