Day Two at Monte Azul in Panama City

Lentejas En Funda and Arroz Con Leche were the products on the menu today at Monte Azul as we continued our Jet Cook™ production trials for the second day.

These are the signature and big volume products for Monte Azul, and the product quality was the most important aspect of the trials.

Both products have cooking times in excess of 4 hours and have multiple processing stages.

We started with Arroz Con Leche, and by using our patented In-Tank Jet Cook unit produced the product in 50 minutes.  This rice-based product has issues with burn-on due to the high level of milk in the recipe and the thick finished product viscosity.  There was zero burn-on as the Jet Cook never gets any hotter than the product, and the end product was of a top quality.

The second product, Lentejas En Funda is a very thick Panamanian lentil soup which again takes in excess of 4 hours to cook.  Our Braising Bar and In-Tank Jet Cook cooked up a delicious tasting soup, and the times and processing stages were both reduced.    

It a pleasure working with the cooks and processing team here, their enthusiasm to learn how to use Jet Cook and convert traditionally cook recipes to the new system is first class.
